What a great day! Got to go to church, came home and got to plant in the new raised bed gardens, And then at 4 PM I decided to bake. A lot. 4 breads (2 different kinds) and 24 of one kind of roll and 12 of another and then 6 healthy, cinnamon buns! Lots of rolling of rolls. I weigh each piece of dough so they turn out uniform. Although it was the smallest thing I made, I had wanted to try to make light, whole wheat, healthy cinnamon rolls. I used a mixture of cinnamon, a little bit of sugar, a tiny bit of butter, some olive oil, and a lot of honey. They really are good… Of course I had to try several to make sure of that😂😬👍 What spurred me to make so much was, we were actually OUT of homemade bread. Ridiculous for as much as I bake to run out. I think I have enough for a while now. All safely frozen. Best yet was I made a bruschetta bar with all homemade pestos, balsamic tomatoes, something in a jar called Mediterranean spread that was outstanding, burratta cheese and chopped arugula (!!!) feather will realize what burratta is. To me it was solid gold (the burratta) as it is hard to find in a city much less where I live. I got it (2 containers) from Trader Joe's of all places in a city I visited. All in all a great day.

Burratta is a mozzarella like cheese, when stretchy and hot, made into a ball, then open the middle of it and fill it with cream and shreds of mozzarella. Then seal it up, then dunk in into cold water so it stays in that shape and keeps the liquid filling.
In the chocolate world, it is like a chocolate easter egg, filled with a creme filling. Burratta is cheese filled with more decadent cream--in the cheese world.
I've never had it but it sound like perfection. I never felt confident enough to try to make it.
It all, the bruschetta bar sounds delicious. What a great lunch or dinner idea. What a creative and delicious day! Thanks for reminding me about all of it.
Basil is planted and just around the corner, and arugula, we planted, and hope to see it this summer.
