Does anyone make their own extracts? ie vanilla, coconut, coffee, lemon, lime, orange, grapefruit.
If you do what recipes do you use them in?

The only one we've ever done is the vanilla pods in vodka. I'd be interested to hear how people make other kinds.

I do vanilla beans in vodka also. Use the resultant extract in any recipe that calls for vanilla.

I've made lemon, lime, orange and grapefruit.
Take the peel (peel so that you do not get the white part(pith)) add enough vodka to cover and let sit for about 4 weeks. Strain and use like you would any extract in a recipe.

I make limoncello which is lemon skins (no white pith), vodka, sugar (as you desire). Very intense. I don't make it very sweet. You can drink it or use in a drink. Seltzers mix well with it; and very fancy drinks also.
BUT I love adding it to recipes - cakes, pies, breads.

I like to make some of my vanilla with irish whiskey. It adds a subtle something that most times you cannot taste, but in vanilla pudding or ice cream or something of the sort, you can tell a difference between that and vodka vanilla.
