Likely they've just been in the freezer too long, since I do time how long I blanch, but the green and yellow beans I froze last fall are just soggy. I made an OK side dish by braising with a little bacon grease and onion until the beans just started to brown. Any hints on freezing technique that would make a better product? I'm not crazy about home-canned green beans, so maybe I'll just eat 'em up in season, or take some to the food pantry.

Use Less, We just ate green beans tonight also from the freezer. The best method I have found is to wash, snip but do not season at all. Then roast lightly (times will differ) at 350F on with a tiny bit of EVOO on them, until still firm but not crisp. Then put the entire pan in the freezer and when they are frozen toss into a ziploc. Tonight when I took them out they went frozen but separated and with salt, seasonings, and some EVOO into a 400F oven till lightly tan/brown just on the tips. YUMMM!

I think it depends on the bean...can't remember the name right now but there is a difference.

dw, Yes, indeed. Commercial canneries favor, or used to favor, Blue Lake. My Dad was chief engineer for many years for a well-known chain of commercial canneries.

Our family likes the canned beans. We grow 'contenders' as the type of bush bean. I've heard that 'providers' are also a good canning bean. Green beans, yum.

Feather, both of those beans are great producers. I grow both of them. There is another great producer. It's called "Strike". I have not grown them before so I have no results to share. Last year we grew contender and provider and the harvest was amazing. We are not planting any green beans this year as our pantry is still overflowing.

I'm expecting we'll grow beans starting early and another set right after garlic harvest into fall. We had two bad years in a row so I want to count on this year. We'll be fencing, and trapping, to keep the critters away. Contenders, Providers, and I'll look for Strike too.

We've grown and canned Blue Lake for several years. They keep their texture through the canning process well.
