There are two maybe more kinds of cinnamon. The expensive ceylon cinnamon is more nutritional and it has a smell that you can notice. I totally enjoy it in my oatmeal every morning. It isn't harmful to your organs.
The less expensive kind and I had a bunch of that, cassia, that I found out it shouldn't be eaten but it can be used for mold control and damping off when planting seedlings. I was going to throw it out but it is useful.
We didn't know it would matter so much but the trays I used the cheap cassia cinnamon on, sprinkling it on the top of the soil, did much better than those without. Tomatoes, peppers, onions, and even my soil-sprouts, it became obvious if we didn't sprinkle the cheap cinnamon on those the mold was a little bit worse. Fans also help with keeping them dry and I rely on the fans mostly, but the cassia cinnamon also stopped the mold.
So if you get that issue damping off or mold in your seedlings, try some cassia, it does seem to help.

Aldi has good cinnamon IMO and it's not expensive.
Dollar General's cinnamon, however, appears to be made from the floor sweepings of the cinnamon factory, lol.

DexH loved cinnamon toast, but I could not convince him that the cheap stuff he bought at Walmart was not the same as the more expensive kind. I bought a bag of Ceylon online. What a difference! I did not now about the damping off issue, but now am glad to know there is a solution. Thank you.
