So I'm adventuring into new kinds of fresh cheeses (thank you feather for the encouragement) and I made a tasty fresh cheddar yesterday. Fresh cheeses are not required to age and are meant to be eaten within the week or so. Anyway, my cheddar tastes and looks good, it slices and grates well. One thing though is that it sort of squeaks when you're eating it - almost like it's a bitg too dry/dense. Before I make it again, I'm wondering if this might be a little too much rennet making it too tight - or maybe too much culture - making it too acidic? Ideas anyone?

I did a search for 'squeaky cheese' and, apparently, it's a thing. You've stumbled on a trend.
Ok, so it squeaks because it's fresh. The squeakiness would go away if you aged it. Nothing wrong with eating fresh cheese, though.

White and orange cheddar cheese curds are a big deal in Minnesota and Wisconsin. To be a good one, it has to squeak when you bite into it. Deep-fried cheddar cheese curds are the biggest selling food item at the Minnesota State Fair. All that to say, I haven't eaten a cheese curd, or any cheese for that matter, in three years.

Cabin Fever is right, good cheese curds have to squeak. They HAVE to. It can be kind of weird the first time you experience the squeak, though.

They stay squeaky longer if you can avoid putting them in the refrigerator .......
In order to revive their squeakiness, you can put them into the microwave for a few seconds, but not for too long!

Purchased.... 5# “sleeve” of Young Colby 2# of plain Curds 1# of RANCH Curds
Also available today ..... Garlic and Herb Curds Pepper Jack Curds
and a multiple of other Cheese varieties .... Onion Horseradish Asiago Provolone Parmesan Aged Cheddars Gouda Havarti Swiss Bacon Cheese Etc, etc, etc .......
Yum ..... the Ranch flavored Curds are squeaky!

This is hilarious in a good way- I absolutely never heard of squeaky cheese. DH grew up in Minnesota - he never heard of it either. I'm thinking I made a mistake and it turns out it's a desired thing. It's so much fun to learn new things, especially regionally specific stuff.

We discovered cheese curds on one of our summer road trips years ago. Wisconsin or Minnesota somewhere. Haven't been able to find them around here. You're making me hungry. Sounds like I should try do-it-yourself.

Funny, I just picked up cheese curds this morning at a cheese store. I have never seen the varieties Tallpines described; if I did I'd buy and try 'em all. I love cheese curds.

stickinthemud, You can buy a hunk of young Colby cheese. Cut it into cubes ..... 1 inch or less. Zap a few at a time in the MicroWave for 10-15 seconds. You will get a delicious warm cheese .... very close in taste to fresh curds. lindy, I think their flavored curds are made by simply shaking the seasoning over the finished curds ..... not too much! (Something like a packet of the dry Hidden Valley Ranch dressing) 50 years ago ..... before all the food safety rules and regulations ..... we could go the factory .... reach right into the vat to grab a handful of STILL WARM fresh curds! Now days , because of all the regulations, we can’t get near the area where the cheese I’d being made ........

HERE IN Wisconsin, we also have DEEP FRIED CHEESE CURDS!
Lightly breaded and deep fried in oil !!!

I have no idea how old I was when someone told me that squeaky cheese was really cheese curds.... Dairy State cheese in Rudolph puts their curds out warm every morning except Sunday (because they don't make them that day). I grew up 5 miles from there and still make that my go-to cheese stop when I'm down that way, curds always included.
