1 cup flour ½ cup sugar 1 tsp baking powder 1 tsp baking soda 1 tsp salt 1/4 cup butter 1 cup buttermilk 3 cups rhubarb, chopped 1 cup sugar 2 TBSP butter 1 pinch ground nutmeg 1 cup boiling water Preheat the oven to 350. Grease a 9x13 baking dish. In a medium bowl, mix together flour, sugar, baking powder, baking soda and salt. Cut in butter. Stir in the buttermilk just until blended. Pour into bottom of pan and sprinkle with rhubarb and sugar. Dot with butter and sprinkle with nutmeg. Pour boiling water over dish and bake 45 minutes until rhubarb is tender. Will be set on top and saucy on the bottom. Serve hot or cold.

Now if I just had some rhubarb. My mother used to make rhubarb dumplings, just like she made chicken and dumplings. She cooked and seasoned the rhubarb to her liking, then dropped in Biscuit dough by the spoonful. She did this with most fruits.

I made this recipe today. It was very, very good. Changes I made. I used frozen rhubarb and I drained off 1/2 of the juice. Next tine I will retain all the juice. I reduced the sugar to 3/4 cup to sprinkle over the rhubarb. Just the right amount of tartness. I used the nutmeg; next I will add cinnamon instead.
Thanks for the recipe. I have tons of rhubarb. And I am always looking for new recipes.

What does rhubarb taste like? I've never had it. Tart. Tart. Tart. Even with lots of sugar, it's still sort of tart (tart like a cherry pie, in a way). That being, we love it! Even my 11 month old grandson, who had his first taste a few days ago, couldn't seem to get enough of the rhubarb pie I made.
