Yesterday on my monthly shopping trip I bought some absolutely beautiful baby eggplant .. I was thinking of making stuffed eggplant but thought I would ask for tried and true recipes from you all before deciding on the finial dish .
I have 8 of these tiny beauties and do have a few days before I HAVE to cook them ...
Any ideas would be appreciated ...

What did you end up making? I never buy eggplant & am intimidated by it!

DW loves it sliced and broiled with Greek seasonings and feta cheese

I ended up making a basic stuffed egg plant but since they were so small I didn't scoop out the flesh I just stuffed between the 4 quarters ..
This next month I am going to buy them a bit bigger so I can do a little scooping of the inner flesh and then make my stuffing ..
For me smaller is better ...
I am the only one who likes it so if I do a big one it takes me forever to eat just one .. since I found they don't freeze and reheat well ..too mushy and gummy for my taste .
I ended up doing a search on YouTube and combining aspects from a few recipes to make mine ...
