So …….. baby carrots ….
When your bag of baby carrots has been in the fridge a week or two, or more too long …. And they no longer look fresh ….
Before they have reached the point of tossing out ….. not to the obvious slimy or rubbery stage ….
But to the stage of looking ‘white’ ….
What is that ‘white’?
Is it that they are dry and dehydrated?
Is it caused by a mold or other dry fungus?
A quick scrapping or peeling brings out the nice carrot color once again but ……
peeling 2 pounds of those tiny carrots takes (took me) 2 hours!
If it had not been snowing with gusts of 50 mph, I would have gone to the store and bought a new bag!
But …. I was raised by depression era parents.
So …. Probably could not have tossed them with out a feeling of guilt!
They ended up going into a delicious chicken pot pie …
Left overs today! 👍👌
My pot pies do not use a pie crust, but instead are covered with biscuits …. YUM!
I always use BISQUICK to make my biscuits.
So … after the onions and celery were sautéed and the chicken was cut up and the carrots were cooked to that just right stage …. I discovered I had no BISQUICK. 😩
I have never been successful at making homemade biscuits …. But probably had used all-purpose flour in those attempts.
Now the I am 75+, a touch of the GIFT OF wisdom has begun to seep in.
I created some homemade self-rising flour, grated some frozen unsalted butter, gently mixed it all up, and, lay that concoction on top of the other ingredients.
25 minutes latter …. I was impressed with the out-come!
Now …. Back to those carrots ….
How do you deal with those carrots that are beyond their ‘fresh’ stage?
