I have always loved beets!
Even as a baby, mother said I LOVED MY BEETS!
Did you know that your urine will be tinged red when enough beets are eaten.

When my mother-in-law found out about my love of beets, she made me some beet jelly. 😏😮
Now, I had watched my own mother make beet jelly.
I didn’t like what I saw.
My mother was an extremely finicky housekeeper …. Like OCD finicky!
Her food preps were also finicky.
My mother would take those fresh beets and wash them well, with one of those little Fuller Brush scrubbers that the door to door salesman usually would give out free.
But ….. She always left about 1/2 to 1 inch of the stem and root attached to the whole beet when she boiled them, to remove the skin. Something about not wanting the beet to “bleed” too much.
In my mind, there is no way that all the soil that was in the multiple crevices of the stem and those fine roots that surround the main root could possibly been washed away.
So where is that soil after the cooking?
Its gotta be in that cooking water!
How is the beet jelly made?
You take that cooking liquid, add lots of sugar and the appropriate amount of pectin …. And end up with beet jelly.
How much actual ‘beet’ is in that end product?
Probably more SOIL particles, than actual beet particles.
Furthermore …. Does it have any beet flavor?
Absolutely NOT!
All it is is very SWEET red jelly, that may or may NOT taste like DIRT! 😫
