A huge hit with my children and grandchildren.
You can use chicken or rabbit (my children used to ask if it was 'fur or feather')
Stewed chicken or rabbit, shredded (or canned chicken/rabbit ... which is what I use) salsa verde .. i.e. green taco sauce (I use homemade consisting of tomatillas, green tomatoes, sweet peppers, hot peppers, cumin, lime, cilantro, onions, garlic) butter or oil flour or corn starch to thicken milk flour tortillas shredded cheese
warm chicken/rabbit in salsa verde, remove meat
If using flour to thicken, melt butter, add equal amount of flour and make a roux. If using corn starch to thicken, add pat of butter, mix cornstarch with a bit of the milk, add to butter/salsa.
Add milk, return meat to pan, cook until thickened.
Heat tortillas, add meat mixture, roll and put into baking pan. Repeat until all tortillas or meat are gone.
Top with shredded cheese. Pour remaining sauce over wrapped tortillas,
Bake 20-30 minutes @ 350*F
I like mine topped with sour cream or crema & shredded lettuce

We sometimes use smoked turkey, I would bet smoked chicken/rabbit would work.. The smoked meat adds a lot of flavor. Friends have requested it several times.
