There is a flock of about 40 turkeys 🦃 meandering around our deck!
Apparently they are not aware that it will soon be THANKSGIVING!

That is a lot of turkeys!
I have not found that roasting wild turkeys works very well but I do like them fried.

We have a wild flock that wanders through here every few weeks. The tom's get themselves all puffed up by looking at themselves in the chrome bumper on hubby's truck! They are so funny to watch!

Melissa, have you ever tried roasting with the breast side down? The brown fat along the spine will baste the bird.

Roasting the wild turkey this way is kind of like when turkeys were roasted in a tin kitchen in front of the fireplace. There was a handle to turn the turkey that would also baste the turkey. Bacon fat was rubbed on the turkey also.

Or brining it in a sugar/salt solution with "aromatics" added for more flavor?
I lost my recipe but there are a lot on line. I don't mess with the aromatics in the brine but do sometimes put apple, onion, celery, etc., in the cavity.
