On Tuesday I ran across a tin that had contained popcorn and it was labeled yeast. It was wwaaay back on a shelf so I decided to see if it were still viable. We got the yeast in a compressed brick with two 1# packages in one wrapping. It was labeled B 3-03. That means we bought it in March of 2003. Yesterday I brought it to the kitchen, opened one package and mixed a little with water and flour. Within an hour it was bubbling and foaming nicely. I added eggs, oil, more flour and some sugar, kneaded it and put it in the frig. I woke up around 5, rolled out the dough, spread it with some butter, sprinkled cinnamon sugar on it to make cinnamon rolls. Boy, were they good.
I've put the rest of that package in a glass jar with a vac-seal lid on it and will store it in the freezer until I need it. That was a relief that it worked so well.

I keep mine in the freezer and it seems to last forever.

Glad to hear it was still good. Makes me feel better about the yeast I have that was dated only 2 years ago that I haven't used yet!

Mine was in the original vacuum-packed Mylar bags and cool and dry in the basement. Still surprising it worked so well.
Melissa, I too store the yeast I'm using in the freezer.
