Our milk is coming in fast & furious as are our eggs. Made me wonder, if there was a temporary SHTF event and you had to primarily live off eggs and milk with small amounts of 'staples' from the pantry -- how many different foods could you come up with?
Of course drinking the milk and scrambling eggs would be right up there. Omelettes and poached eggs are also good. Making cheese from the milk and adding some pantry seasonings would be helpful. A bit of flour could make tortillas for egg burritos or pancakes. I'm thinking a bit of rice would help make egg fried rice.
Other ideas? Trying to think of creative ways to make eggs and/or milk the center of the recipe.

Most stratas or breakfast casseroles have lots of milk and eggs.

Vickie's Country Home on YouTube offers a really good recipe she calls Chili Rellenos Bake that she has "deconstructed" (her word") from the TexMex chili rellenos she ate as a child in south Texas. I've tried it twice, tweaking it to suit our preferences and it's pretty good. She uses more hot stuff than we like.

Here's a new one for us that worked out pretty well. Make a graham cracker crust and let it cool. Make a big box of Jello/gelatin (we used lemon and then next time used lime) replacing the water with whole goat milk. 2 cups hot milk, beat, 2 cups cold milk, beat again. EDIT: I forgot a step -- cool until it begins to thicken. Pour into crust, grate a bit of lemon (or lime) peel on top and refrigerate until firm. Once strawberries are in season, I'll probably try it with strawberry flavor and add sliced fresh strawberries on top.

Sorry, I don't put eggs in the jello pie-but it does use up several cups of milk.
