Now that I've been making kefir for a while, I've become fascinated by the cheese. If you leave it long enough the whey separates out. This I usually give to the dog. The solid becomes thicker, and I have cheese. It has a much different taste than commercial cottage cheese, but I don't add any salt, and it is a mixture high probiotics. It's wonderfully healthy and so very easy to make.
