All of my garlic this year is way ahead of schedule. I usually have 3 weeks of garlic scapes for my CSA customers before they are over. Not this time. Everything is ready to go. I was cutting the scapes and bagging them up but ran out of room in the fridge. Then I remembered hearing about pickled scapes. It seems the basic recipe is to use the Ball Blue book for dilly beans. I dug through my book shelf and found "The Joy of Pickling"- several great recipes I'm going to try out.
Anyone ever water bath can garlic scapes? Here's the recipe from the Joy of Pickling:
I'm substituting scapes for garlic.
2 quarts of water 1.5 cups vinegar- I'm using 5% apple cider 1 TB sugar 1.5 tsp pickling salt 3 whole allspice berries 6 whole black peppercorns 12 whole coriander seeds 1 bay leaf torn into thirds 3 small dried hot peppers (japones, de arbol split lengthwise) 3 cups garlic cloves- I'm cutting up the scapes instead
this recipe makes 3 half pints. I'm going to be making a LOT more than that if the first batch tastes good.
In a pot, bring vinegar, sugar, salt, to a boil. divide the peppers and spices into the 3 half pint jars stuff jars with the scapes Ladle boiling brine into jars. Leave 1/2 inch head space
Process boiling water bath 10 minutes. Store for 2 weeks before eating.

I pickled 8 quarts of beans with scapes yesterday, along with 24 plain dilly beans. About 1/3 each, green, wax and scapes. Pressure canned. I just use the dilly bean recipe. Pretty mild recipe, a little just pickling spice, mustard seed, vinegar, water, salt and dill....James

James, do you actually have ripe beans already?!! And I love the idea of scapes in with the dilly beans, yummo!

Yes, I planted the beans under a hoop on tax day, then moved the hoop after it warmed up, planted more under it along with other things. It covers 4 rows and is 16' long. Metal electrical conduit and 4"x4" runners, 2"x4" cross piece on the ends. Sidewalls are 4' tall. Just clear plastic over it. I can creep under it on a sitting stool on 3 little pneumatic tires to water and weed. Handles on both sides, 2 people just lift and carry....James

What variety of beans did you plant? By tax day- April 15th? I'm slightly envious Your set up sounds really great, btw. Now I'm going to have to remember to plant them in my green house for next season.
