A friend caught halibut today. I'm getting a whole one around 30-35lbs. Was thinking of cutting into steaks and freezing. Is there anything special that I should do to it first? She' s cleaning it for me.

It ended up being 23lbs, not 30lbs after gutting. I cut the pieces into 1lb portions and used a food saver to seal them before freezing. When it was all said and done, I had just under 12lbs of fish in the freezer. I'm glad that I weighed before and after. It will help to know how much we actually go through each season.
Last year I canned 4 salmon and couldn't tell you how many jars I stocked. This year I'm trying to get a lot better about keeping tabs in a canning notebook for how much I put up.

My friend caught this 311lb Halibut last July and sealed and froze it just like you. I BBQed some this weekend and it was as good as the first piece I had back then.
