You make Sri Lankan Fishcakes, is what. Tonight's batch came out REALLY good!
Steam 2 large Russet potatoes and 3 small yellow potatoes. When they are about half done, put on another steamer tray with 4 fillets of salmon. (Like, 4 one person serving size fillets). When everybody is done, set aside to cool. Peel the skin off the potatoes and chop them up and toss into a large bowl. Mince up a really big jalapeno, and add that. And 3/4c of dried NOT SWEETENED grated coconut. You can also use frozen grated coconut, as long as it is not sweetened-- VERY IMPORTANT. I used a pastry cutter to chop them all together in the bowl. Add about 3/4 cup of minced onion, and salt. Then mix in the salmon, breaking it up and removing any pesky bones. Add half a bunch of chopped cilantro, and 1/2 c nasturtium capers chopped up. (Or the regular kind. Or not, if you don't have any.) Mix it all up nicely and make into 2 and a half inch patties.
Now heat up a little bit of oil in a skillet and toss in some cuminseed and some fenugreek seed. If you don't have fenugreek, the world will not end. Fry the fishcakes and enjoy with ketchup.
You can also dip the fishcakes in beaten egg and then in breadcrumbs seasoned with cuminseed, cayenne and turmeric, and then fry them. Either way. DELICIOUS!

That sounds nice. getting fish into hubby is hard unless disguised. question on the potatoes. is that two floury and 3 waxy?

Yes, that is just what I happened to have on hand.
You can use non-freezer-burnt salmon, too, if that's what you happen to have...;-)

We would use just about any fish for fishcakes, especially those which aren't normally eaten. That would be carp, buffalofish, suckers, sheepshead, etc. They'd be run through a grinder with a sausage plate. Never used coconut but potatoes sometimes part of the concoction. Never paid attention to the type of potato as whatever was on hand was used. Onions were automatic in every mix and sometimes crushed soda crackers. Made a food fit for a king from something that even his serfs might turn up their noses at!
