We gathered the first batch of the year wild plums. These make DH favorite jelly plus they are free. I washed them well and sorted them. I have some that need to ripen a bit. Can I just leave them out on the counter for a few days to ripen? I have frozen the others until I am ready to make jelly.

They will ripen out yes, but they may rot pretty fast as you have washed them, try to get them as dry as possible. Some underripe ones will make the jelly set better anyway, just throw them all in would be my way, maybe add some more sugar if the end result turned out too sour.

Not certain of what type are involved but I know of some which possibly only ripen off the tree. Hence "gathering" is the exact word to describe it since it's not picking. I used to make a great wine from some old trees which are now gone due to road widening. I found that once I had them collected, and despite apparently sound fruit, there was about a 3-day window in which to process them. It was quickly downhill after that.
