I think this is the right forum? I went for a walk round our field today and I see the wild roses are just coming out, and they smell wonderful. I would like to make some rosewater. I can find several recipes online. but I'm really after something that will keep. (for more than 1 month in the fridge!) I saw some for rose oil not sure if that would work in my recipes or not, has anyone tried using rose infused oil instead of water?

What do you want to use it in? My first thought is infuse in vodka if you want a flavor additive in cooking. Or I wonder if one could pressure can a steam distilled hydrosol and keep enough of the flavor and scent?

Yes it's for food. trouble with vodka (which I'm sure would work IF I didn't drink it first!) is some of the recipes are not cooked.
