A week ago I stumbled across a recipe using sweet Bing cherries to make juice for canning. I wrote it out and lost the recipe. I seem to remember that the cherries were cooked with a certain amount of water and sugar, drained, then the pulp was put back into a pot with a lesser amount of water, cooked and drained again. Then the water bath came in.
Does anyone know what I'm talking about? I was so excited when I found that recipe. The Ball Blue book doesn't have one for cherry juice. And I have 40lbs of bing cherries sitting on my counter waiting to be made into beautiful jars of juice.
