I have a box of unripe apricots- 20lbs. I didn't realize they weren't ripe when I bought them- the color is right, but not sweet. The original plan was apricot jam. Everything I've read on line says they won't get better taste wise. Anyone have experience with unripe apricots? I'll probably make a trial batch and see how it tastes. I'm open for ideas.

Peel them and puree them and make into jam or save the puree for baked goods?

I'm stalling on making jam but I should just try it, I guess. I don't know if it will still taste like apricot- I tried to eat one fresh and it was bland. Almost no taste. Guess I should just try it and see. At least lemonade tastes great when life gives you lemons...not sure about when life gives you flavorless apricots, though.

Do you happen to have or could get easily some apricot or peach extract? You could add some to the apricot pulp to pump up the flavor. Or maybe just combine with some other flavors to come up with something different, maybe some cinnamon and vanilla, almond and cardamom? Or maybe blend with some other flavor of frozen fruit, if you have any in the freezer, like berries. Those are the only ideas I have. I just hate the under-ripe, non-flavor fruits and veggies they sell nowadays, argh! It's why I'm working so hard to get my own garden and orchard built up more. Good luck!

Thank you, calliemoonbeam for those ideas. I liked your idea about mixing with some other fruit. So I halved them and froze them until my blackberries come into season. Apricot blackberry jam sounds good. I contacted the seller and he offered me a replacement box- after he tasted them to make sure they were good. I'm hoping to have a good box of them to pick up this weekend. Home grown really is so much better. I'm always reminded to be grateful for what I'm able to grow for my family.

That's great that he's willing to replace them! The blackberry mix sounds good too, don't know why I didn't think of that, I have tons of wild ones here.
