How many sausage patties per pound, roughly? Any tips? I'd like to put them in wide mouth 1/2 pint jars. The usual 90 min?

I usually get 6 patties per pound and they fit in a pint jar. Yes 90 minutes at 15 pounds of pressure ( for me at 1200 ft. above sea level)

I believe the 90 minutes is for quarts. The psi is based on your altitude, but the time is 90 minutes for quarts, and 75 minutes for pints. I do half-pints the same 75 minutes as for pints.

Do they stay patties? Grease isnt a problem with sealing?

Do they stay patties? Grease isnt a problem with sealing? Should brown them first. Leave proper headspace. Make sure the sealing surfaces are clean. Should not be a problem

Yes they stay in patties, before I seal the jar I wipe the lip with vinegar to cut the grease and clean.
