Watermelon is everywhere, and someone told me I can pickle the rinds & can them. First off, has anyone ever eaten pickled rinds? Are they any good? They sound weird to me, but I'll try anything three times.
If you like them, do you have a recipe to share?

Never had any pickled, but my grandmother used to make watermelon rind preserves that were pretty special.

Grandma made watermelon pickles, and then Mom did. Been a long rime since I ate any, not a big fan of watermelon, even less, pickles. Not bad, just different. Here is Grandma's recipe.
Watermelon rind pickles!
Rind of 1 large watermelon 2 cups vinegar 2 cups water 4 cups sugar 3 cinnamon sticks 1 teaspoon whole cloves 1 lemon, sliced thin Pare the skin from the rind and remove all pink portions, pink part becomes mushy, makes foam to deal with in the pickling brine.
Cut rind into 3/4 by 1 inch cubes, place in a large pot, cover with water and simmer until nearly translucent - about 20 minutes. Drain.
While the rinds simmer, prepare the pickling syrup. Boil the vinegar, water, sugar and spices for 10 minutes, add the cubed watermelon rind and simmer until the rinds are clear - about 12 minutes but can vary. Pack in sterilized jars and process as you would any other pickle....James

I've candied the rinds before, that works really well, especialy if you cut them a little thick so they have a nice stripe of pink on one side.

I have made watermelon rind pickles and really like them. I used the Ball Blue book recipe and cut the sugar in half. They are still sweet, but not as cloyingly sweet as if the whole amount of sugar is used. They are an old fashioned pickle and remind me of church picnics when one of the ladies would ask everyone to save the rinds from their slices of watermelon. That made my Mom cringe and she would never eat that lady's pickles.

Pickled watermelon rinds are a part of my childhood. My mother and grandmothers were old fashioned, and in their circles, a lady took a lot of pride in her pickles and relishes. Just like candied gherkins don't taste anything like cucumbers, pickled watermelon rinds don't taste anything like watermelon. They're infused with sugar and sweet spices. Pickled watermelon rinds were always part of the Thanksgiving table, along with corn relish and bread and butter pickles. They were nice counterpoints to rich meats and veggie dishes. Thanks for bringing back some good memories!

When I was gardening at WeGrowGarlic in 2012, had plenty of room for vining things and planted lots of squash and melons. Believe it or not, both of our families got tired of watermelons! Got to several points where I had to bring them home to prevent them from spoiling and then just save the rinds. Made several big batches and they've been my contribution at 5 or 6 family feasts. Always a hit along with my beet pickles.

I like to dice my rind up in tiny squares if I make pickles......be sure to get all the red off, and the green rind, use the white....they are good....

Mom made the watermelon rind preserves. I think it was one of those old recipes from back when you threw nothing away that could possibly be eaten. It was ok, but nothing special.
