I would not can it. I would sauté the vegetables and freeze. Then you can add your thickening and broth to make your soup.

I make a dry mix that is often referred to as "cream of anything soup". I just add dried celery (or fresh or frozen) to that when I need it. Some for cream of mushroom, chicken, etc.
