The jalapeno peppers have gone crazy....picked a bunch....decided to cook sliced okra with the red ones, so diced the red jalapeno peppers fine, added to sliced okra, cooked in butter in an old iron skillet...MMMMMM....going to put them in a hush puppy batter and eat with supper tonight.....
JALAPENO MACARONI SALAD
12 oz. medium size macaroni shells or elbows, cooked and drained Fresh green onions --I use about 3 or 4 I also add a little sweet white onion to this, 4 jalapeno peppers (deseeded) and diced fine I use more because we like ours hot to the taste salt and pepper to taste garlic powder to taste (just a dash ) 1 pint Real Mayonnaise--make it good and moist Dice onions fine (I cut mine with the scissors) or chop onions and peppers till fine in a food processor. You want these in small pieces, not liquid. Mix all together and chill overnight. So good !

Thanks for the salad idea, like you our jalapenos have gone crazy, already have canned/dehydrated enough for the year..and we only have 4 plants.

What about halving them, filling with cream cheese, wrapping with raw bacon and baking them? Called jalapeno poppers, but don't confuse them with the gnarly restaurant fried versions. Super yummy.

I put some Hinkelhatz and Jalapenos out early when it was soooo wet.
Yet the Hatch peppers and Hinkelhatz that I was late planting after the heavier rains stopped, are just loaded.

What about halving them, filling with cream cheese, wrapping with raw bacon and baking them? Called jalapeno poppers, but don't confuse them with the gnarly restaurant fried versions. Super yummy. We do that, only we use pineapple cream cheese. Cut the tops off, core them with a peeler, put the cream cheese in a baggie with the corner cut off and pipe it in the pepper, then wrap the bacon around over the top to hold cheese in. Put the on the grill until bacon is crisp. Best to use thin sliced bacon.

Do that, but add a little smokey to it, and put it in a smoker for a couple of hours. A little paprica and cayenne pepper added to the cream cheese helps too. Called "Buffalo turds" around here.
