Just realized recipes that have been made w/cauliflower are out there. Pizza Crust, etc. Please share your recipes. I've seen pizza crust recipes made with and without presteaming. Looking for TNT things.

Steam cauliflower until soft. Mix in a bit of butter and cheese and use a mixer until smooth. Cauliflower "mashed potatoes" :-)

This is great stuff -- pretty much the only way I really like cauliflower. Served it for many years at my teahouse, where it was very popular:
South Indian Curried Vegetables
Mince a medium onion. Mince 2 T fresh ginger.
Heat ½” oil in the bottom of wok. When hot, toss in 1 tsp black mustard seeds and cover till done popping.
Add the onion and stir a bit. Fry till turning brown.
Add 2 tsp whole cumin seeds and ¼ tsp ground fenugreek. Stir more.
Add the ginger, 1 tsp turmeric, and two good-sized cauliflowers cut into flowerets and cubed stem. Stir well to coat everything with yellow.
Add 1 tsp cayenne, a 15oz can of chopped tomatoes, 2 t ground cumin and 1 T sugar, 2t salt. Cover and lower heat.
Meanwhile, chunk up 1½ c carrots, and toss those in, too. The cauliflower should be cooked but not mushy, and when the carrots are about half-cooked, add 2 c frozen peas. When done, garnish with a handful of chopped cilantro. Serve with rice or wholewheat chapati/tortillas.

Steam lightly and then cool; dip in tempura batter and fry. Offer ranch dressing to dip with, as well as a sweet-sour sauce. Noms! Even the kids'll like cauliflower.

Cauliflower mashed potatoes do sound good, we'll have to try that. Recently had various mixed veggies all pickled together (beets, cukes, carrots, beans, onion slices, garlic etc...), they were really good - but the Cauliflower was outstanding.

Again made cauliflower pizza crust Followed recipe exactly. Crust way too thin and have to lower temp to keep from burning. Anyone else have experience with c pizza crust?

Maybe add an egg to hold it together? No experience there, but I would think you need a binder of some sort. DH suggests you cook the crust first, to get a sear on it and so it doesn't turn to mush.

I have used this one....James
1 head cauliflower, remove stalk 1/2 cup shredded mozzarella 1/4 cup grated Parmesan 1/2 teaspoon dried oregano 1/4 teaspoon sea salt 2 eggs, lightly beaten
Directions Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. Break the cauliflower into florets chop very fine. Steam and drain well on a towel. Let cool. Combine the cauliflower with the mozzarella, Parmesan, oregano, salt and eggs. Spread in a circle on cookie sheet. Bake for 20 minutes. Add desired toppings and bake an additional 10 minutes.
