What's the best way to store kale? Goes bad in fridge after 1-2 days.

In a crisper drawer? Fresh kale or "store fresh" kale (stale kale shipped in from Timbuctu...)? It usually last at least couple weeks in frig crisper for me, usually longer than that. By way if you are going to cook it, doesnt lose much quality if you just toss bag of it into freezer, will last couple month or so that way, more if you properly process and repackage it. Kale holds up better than most any other green except head of cabbage.
Now spinach seems to be absolute limit of two weeks for me and then maybe get some spoil in bottom of the bag with bag in the crisper. Annoying since I have to about live on raw salads anymore with the diabetes. Spinach whole lot tastier raw than kale.

Stand it in water in the fridge. Trim off the bottoms if it's bought and they have gone hard.

I preserve it by coating them in olive oil and baking in the oven until crispy, the "chips" keep well for a long time that way, just keep them dry

That's pretty fast to have it go bad. I grow it for our CSA boxes. I've cut it, put it in a produce bag and then forgotten about the bag in the fridge (on any random shelf) and still had it look fresh almost a month later.
I'd say either your fridge wasn't staying cold, or it was old kale to begin with. I love kale because of how well it holds up among so many other reasons.

I was visiting with my god-father. He gave me a whole bunch of seedlings. He's grown it for years in small batches and keeps replanting every week. Then he starts it in a cold frame for winter.
No storing for him, really. He picks & uses what he needs. And gives lots away. I guess he always has a bunch in the fridge ready to cook. It keeps at least a week, unwashed.
His family came from the old country and he grew up in the depression. He doesn't let anything go to waste.

Yes, that's me. Taken in front of the barn at WeGrowGarlic and picture off their site. Pipe was my trademark for 50 years. (Beard only been around for about 45.) After several bouts with pneumonia, doctors said that I'd be better off without it. They lied!

If I had some decent teeth left, I probably could walk around with a pipe in my mouth. I swear that the pipe is what prevented any tooth decay for almost 50 years. I was 27 when last major dental work was done and it's all fallen apart in the last year. Three-tooth crown and bridge combination broke off on 17 July chewing on a goat meat kabob at an East African picnic. What was left of the wisdom tooth was pulled two days ago. Left one isn't going to last through next week if I have to pull it myself. Now and then my cat finds the tobacco pouch and carries it around for some reason. And I do have a pound or two of some good tobacco here. Never did inhale since that's not what one normally does with a pipe. Biopsies on lungs say no damage due to tobacco use. With so many other things going wrong, makes me wonder why I am depriving myself of some joys in life. Martin

That's a shame about your teeth - I have nightmares where my teeth fail out in my hand, and am always relieved to wake up and realize I still have a full set! My dad smoked a pipe or cigar for many years, and quit the day he got new, store-bought teeth. Unfortunately, he wasn't as lucky to avoid the consequences of smoking...first bladder cancer in his late 60's and then lung cancer at 80 took him from me, way too soon. I think he would have enjoyed visiting with you. He was an avid gardener.
