I have a #10 can of dehydrated banana chips I'd like to use and thought the upcoming holidays would be a good time to do that. Has anyone used these chips for banana bread? Do you rehydrate them, mash them up and use them like fresh? Any ideas would be appreciated as I don't want to waste them with unsuccessful experiments.

I had a lot of home dried banana slices after a friend who owned a wholesale fruit and vegetable business gave me 100# of slightly overripe bananas. Took me forever to get them all processed even after I gave one full box to a friend.
Anyway, I measured out less water than the amount of fresh bananas, like 1 3/4 c. water for 2 c. of mashed bananas. I kept adding slices until the bananas were the appropriate consistency and kept track of the weight of the dry bananas for the next time. Worked just fine.
If you want to make banana pudding, use extra milk in the pudding part then use the slices as you would fresh banana in layers with vanilla wafers. The bananas will reconstitute overnight just fine. They are a little darker than fresh bananas but taste just fine.
