Anyone got a recipe for this? Have a older relative, think would like this. Recipes I found, used flax seed. Doubt she has that or will buy it.

This is for basic muffins. You add whatever fruits, etc.
INGREDIENTS
1 1/2 cups all-purpose flour 1/3 cup sugar 1 1/2 teaspoons baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 1 stick (1/2 cup) unsalted butter 1 cup sour cream 1 large egg 1 teaspoon vanilla PREPARATION
Preheat oven to 400°F. and butter twelve 1/3-cup muffin cups. Into a bowl sift together flour, sugar, baking powder, baking soda, and salt. Melt butter and in a small bowl whisk together with sour cream, egg, and vanilla. Stir butter mixture (and additional ingredients; see note, above) into flour mixture until just combined. Divide batter among muffin cups and bake in middle of oven until golden and a tester comes out clean, about 20 minutes.

Flax seed is usually used as a replacement for egg (for those with egg sensitivity). Could also be used if you are just making one muffin cup as 1 egg would be too much for one cup.
