So I've decided to dip my toes into the cheesemaking adventure and of course come up with a question before even starting.
The recipe calls for a gallon of goat's milk. I'm cheap. I only purchased a quart and am wondering if I can reduce the recipe?

Through my recent research on cheese making I saw where there are some cheese types that seem to depend on a certain amount of mass in order to do their cheese-thing properly. I do not know if chevre is one of them as it is not yet one of the cheeses that I researched.
On the other hand, I do not remember seeing any recipe for cheese making that used less than about two or three gallons or so of milk.

I would think chèvre would work with only a qt of milk.

Thanks. Hopefully I'll be trying it on Wednesday (day off). Spent entirely too much time over the weekend cleaning Dad's house for Turkey Day.
