We have 2 does and a buck. DS does most of the chores now, he does the butchering. We love rabbit meat. We bake low and slow after marinating in Italian dressing or grill them over apple wood. We have big long Cali x New Zealands, mostly white, a little gray or black around the ears and some spots.
We eat 1/4 rabbit, 1/4 chicken/turkey, 1/4 fish, 1/4 red meat (pork, beef is mostly ground, elk and venison mostly as jerky and pemmican. Not huge quantities, more for taste and protein than main dish, except fish. We butcher early and as needed, canning most of the overflow. We freeze some deboned meat after cooking to add to rice, for wraps and casseroles. Grizzly gets the heads some internals and we work a few pelts. I have a rabbit coat and love slippers, hair in, or mocs, double soled with elk hide. Best winter socks, ever, totally water proof, no wet feet, ever....James

Sounds like you have a good system. I am wanting to learn to work the hides myself. Not counting the mini lops which are my daughters project, I have one buck Californian, two californian does, and a Jr cal doe that my daughter will be showing until she is old enough to become a brood doe. One of my does is pregnant, the other has 9 three week old kits. I plan on keeping one or two does (fastest growing) from that litter to breed, and plan on adding at least one or two more cal does this year. I'm hoping to add a trio or quartet of new Zealands sometime soon as well.

dba--since I keep forgetting to tell you LOL--I must have 50 hides in the freezer...you can have them whenever you get time to try and tan them

I know a taxidermist not too far from me, I might try to get ahold of him next week and see if he can give me some pointers.

I just brain tan them because I want them very soft for socks. We just pull the hide off. Wash it, turn right side out to wash any blood off, turn back inside. I have a limb crook that is near the same size as my foot/leg. Shrink the hide to fit like a sock. Scrape the hide very well and tan with the brain and let dry. Trim, add a good layer of bear grease in the toe area and sew closed, just like darning a sock toe. Trim top and you have a sock or moccasin....James
