so I am looking for corn flour recipe read about this one corn type 10 years ago that said it made great cookies, grew it and it mostly failed, looked on the net on how to make cookies out of corn for years now and can find not much of anything that I can have, when at the store today I spotted sweet corn flour and got some also I am allergic to gluten, and I mean not gluten intolerant, but can't have any of it at all, and most people add it as often as possible. does anyone know how to make cookies with corn (or sorghum, as I can grow that as well) what I got is not nixamized corn, (or however that might be spelled), but also allergic to that as well. it is not field corn, it is sweet corn dried and then ground into a flour and I want cookies made out of it any ideas ? I figure that someone here already know, so I thought I would ask

Can you just replace the flour and maybe a bit of the sugar from a regular cookie recipe?

that link helped, I tried just mixing it with water and cooking it before I got back to this thread, and it was pretty good that way, adding a fat and a sugar will likely work just fine
