I tried this today and it worked. It's a swedish style of bread, with Parmesan and Herbs, or you can make it with a Cinnamon and Butter filling. If you google 'star bread' there are lots of recipes. I used this recipe: food52.com/recipes/39536-cheese-and-herb-star-bread#commentsWith the following changes. Use 1/3 cup potato flakes instead of 1/4 cup potato flour Skip the egg wash between the layers but use it on the top. Use Parmesan cheese instead of Pecorino. Don't let it rise before you assemble it, instead add 1 t baking powder to the dough, and you get a fast rise and you still get the yeast flavor. After assembling let it rise for 45 minutes, bake at 350 degrees F instead of 400 degrees, for 25 minutes instead of 15. I'm looking forward to trying it with different fillings.

Thank you! I'm pretty sure I'll be making it again, w/o the t of baking powder, and giving them a long rise then assemble then let them rise again. (when I have more time) It tasted at least as good as it looked. Please if you do make it, take pictures and post it here. DH wants me to make one with pear butter as most of the filling. I'm thinking that will be tasty as well!

I like making bread but the one drawback for me is the lack of counter space and flour going everywhere! This star bread was easier than I thought. First of all the measurement of the bread when you are rolling it out is only 10'', so it fit easily on my bread board and I didn't have to make a mess of counters. Second, my rolling pins are 10"s so, measuring was a breeze. I didn't realize they were exactly the right size. The potato flour or potato flakes, make it a very tender dough so less likely to stretch back into it's preferred size, less elastic than usual. Easy to roll out and stretch into the shape you want. [In the recipe, she says to trim extra from the edges if they are uneven from the 10'' rounds. As you can see, I did trim, but I trimmed it when I was done twisting the end pieces and pinching them together. I trimmed it on each tip and then put that all into that blob that was attached to the star.] If you use the baking powder in addition to the yeast, and roll it out right away instead of waiting for it to rise the first time--it saves a lot of time. This is a tip I picked up from an episode of America's Test Kitchen for cinnamon rolls. I thought it was so slick, I had to try it and it worked great. I made my dough in my kitchen aid mixer, assembled it, let it rise, baked it, I think it was done in less than 3 hours from start to finish, maybe less. I think it was very easy in relation to how awesome it looks. This was my first time making it and it went together very easily. I can't wait to see pictures of everyone else's star bread, or as my DH calls it, 'flower bread' because he thinks it looks more like a flower than a star.
