I want to find a good blend of seasoning to make cabbage soup that I will really love. My friend sent me the Goya seasoning the one with ham concentrate. I loved it, till I read the ingredient list. Now I need to find a good blend of seasoning to make it taste really good. I tried all morning. Nothing moves me. Of course, I have garlic and pepper in it. What do you put in your soups to bring them to life?

is it a tomato based cabbage soup? When I make a soup with cabbage- I normally have cabbage/potatoes/onions/garlic/celery and carrots- I chop all that up and will sautee it in the stockpot with some olive oil and a dab of bacon grease- and add salt and pepper and celery seed- and a little garlic powder till it is good and either browned or the veggies are softened- then I add a jar of homemade spaghetti sauce and what ever bone broth I have in the fridge- pork/chicken or beef- what ever one I have-

side note here...i dont fix cabbage like most do.my family fixes it and everyone that does stinks the house up cooking...lol..i cut mine thin and stir fry in a wok with olive oil and crushed red pepper.i swear ya cant tell cabbage was cooked in the house.its like its a different item.all my family does that skillet with a lid on it thing.it doesnt taste like cabbage cooked in a wok to me. but i tend to be a food snob....lol...sorry to ramble kat.

A little caraway seed is good too. I mean just a little - it can get overpowering real quick.

I also precook the cabbage by sautéing with onions.
Take that ham bone and simmer it for at least a couple of hours. Sautee the cabbage and onions, put in the pot. Let simmer for a bit, then taste. It may be excellent just the way it is, maybe a little salt. Ham and cabbage are just so flavorful that I don’t see adding much else. Carrots will sweeten it. If I were to add anything else, it would be a little ginger.

What do you put in your soups to bring them to life? I could never make tomato based cabbage soup taste good until I started to add a little brown sugar. Or, lacking brown sugar, a squirt of ketchup. It doesn't make it 'sweet', it adds flavor and cuts the acidity of the tomatoes. Also, sometimes I add 1/2 teaspoon of vinegar to my serving bowl. Doesn't make it sour, just increases the flavor. Other than your usual seasonings and additional vegetables a common mistake is adding too much water. Add only enough to just top the ingredients. This concentrates the flavors. If you want more broth you can always add some beef broth.

I like to put a ring of smoked country style sausage (sliced) in my cabbage/tomato/vegetable soups.
