I have a smallish piece of boneless chuck. I was thinking to put it in the crock for soup. I have canned and/or frozen vegs to use up. Would you suggest putting it all in together, or is it better to start the beef with maybe onions and fresh carrots, and adding the processed vegs later? Brown the beef before crocking, or don't bother?

I season the beef, brown it, cut it up and then crock it with vegetables. More flavor....James

I put the beef directly in the crock and cover with my homemade tomato juice, which is kind of like a V-8, then season to taste. Onions and celery can be added now. Let it go awhile until the beef is tender and either cut it or pull it apart with a fork. Then add your veggies and let go about an hour more until veggies are tender. Potatoes and carrots or root veggies I would give 2 hours to cook thoroughly.
