Sorry if this should go elsewhere on this thread. I am cleaning out our liquor cabinet and ran across three bottles of cordial that a friend made for us a couple of Christmases ago. I have spent all this time pushing them to the back of the cabinet because I have no idea what to do with them. Are they for drinking? Can I bake with them? Do you have any good recipes? We aren't big drinkers of straight liquor, so if there are any other suggestions out there - even of other liquids to mix them with - I am all ears. I'd hate for them to go down the drain because I can't find a use for them. Also, before you ask, I already Googled "What do I do with Cordial?" and all that came up was recipes for making it.

KT, Make a white or yellow cake, in layers, poke small holes in the top of each layer and brush on the cordial. Add a layer of crushed fruit that compliments the cordial and or add a layer of frosting or filling, between the layers.
A lot depends on the flavors you have. I use a creme de menthe in a frosting recipe that goes over brownies, at Christmas time.
I saw a cooking show making sorbets, a berry sorbet made with sugar, berries, and a cordial in a berry flavor, and an apple sorbet made with sugar, apples, and an apple type cordial. The cordial slows the crystal formation, making the sorbets creamier.
If I remember right, there were lemonade type frozen mixed drinks that used cordials, frozen in ice cream pails, scooped out to serve with bubbly water in the hottest days of summer in my youth.

Thanks! I have a bottle of chocolate hazelnut that is labelled, and two bottles that have no markings altbough I think she told me one is coffee and the other is some kind of lighter nut. I will try out your cake suggestions!
