Creamy Chicken Stew
1 TBS olive oil 1 medium onion, chopped 3 medium carrots, chopped 2 large ribs celery, chopped 4 cups chicken broth 1 pound shredded cooked chicken 2 cups potato, ½-inch cubes 4 tablespoons softened butter ¼ cup all-purpose flour 2 egg yolks ½ cup milk ⅔ cup peas salt and pepper to taste
Directions
Heat oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until tender. Add the broth, chicken, and potatoes, cover and bring to a simmer, cook until potatoes are tender.
In a bowl, stir the butter and flour together. Add to stew and stir, cook 3 to 4 minutes until thickened. Add the peas.
Using the same bowl, whisk the egg yolks and milk together. Whisk ¼ cup of the hot stew into the eggs, then whisk the egg mixture back into the stew. Salt and pepper to taste, heat through. Serve.

Yes, it can be frozen after cooking
The eggs and flour are used to thicken the broth
