Loaf breads make nice easy snacks. The golden color you see, is from the rich eggs we have from our free range chickens. This is the Pumpkin spice Chocolate chip loaves. Kind'a a combo of two recipes. Have also made the Raspberry and Chocolate chip banana Loaf Bread. Now this one, unlike the above, takes time and is a bit of work, but is it ever so good. So what are your favorite Loaf bread recipes?

I've actually never done the cake/loaves like those. My ex used to do zucchini and pumpkin and banana. I pretty much stick to either cakes or breads. Although I do pound cakes in loaf pans.
OOOOoooo! Got a tip for the banana bread - you gotta try this Bergere. As soon as the cake comes out of the oven, coat it with whip cream. The whip cream melts, and soaks in and makes the richest, moistest banana bread you'll ever have. And no one will ever know.
Someone I know did that by accident - just on a whim and the results were phenomenal!

That sounds great Osiris! Have to use a non dairy whipped cream, but that is still pretty good! VBG Will try that next time.

I love quick breads but can't eat a whole loaf myself and my DH doesn't care for them - thinks they are too heavy compared to my regular homemade bread.

They can be a little heavy, but you can carefully fold in whipped egg whites to make the bread a little lighter.

I don't know Bergere if that quick bread is really good or not.

I make pumpkin but mostly I make blueberry muffins.

Solargeek, you need to find yourself some mini-loaf pans. I have a couple sets that make four loaves each; I take my regular banana, pumpkin, or zucchini bread recipes and can get 8 mini-loaves out of each recipe. Then I individually wrap each loaf after cooling and can freeze them for later. When I had lots of teens at home, they never made it to the freezer but instead usually ended up in sports bags for snacking on after school and before practice. Seems like the mini loaves only take about 25 minutes to cook compared to the 50-60 minutes a regular loaf pan requires.

I did not know there were mini loaf pans-- I wondered if you could make even smaller portions in cupcake pans? Or would they burn? Thanks for the info!

For cupcake pans, just adjust cooking time to be like muffins (15-18 min? Can't remember).
