We love the chik-fil-a breakfast biscuits. They are so flaky and buttery. Would love to know how to make those at home if anyone knows/has a recipe! In my experimentation with biscuits I have found there are two kinds. The pillsbury grocery kind in the cylinder which comes out like a roll almost, it doesn't flake or crumble. Then the chik-fil-a kind that flakes and crumbles into wonderfulness. Want to do the latter but have had no luck even with from-scratch recipes we have tried.

Following this. I would love to have a light, fluffy biscuit recipe as well. Most of the ones I've tried are ok, but not really tall/light.

Grandma said keep the dairy cold, grate butter, has to have buttermilk and use a very light hand.
Just barely get the ingredients mixed together. She never used a bowl. Pile of dry ingredients sifted together on counter, add grated butter, cut in with pasty cutter until butter is pea size. Make a well in the middle. Add buttermilk and just bring flour to the middle using fingers of both hands, uplifting, pat into 1" thick dough pile and cut into biscuits. Use brush to add buttermilk to the tops. Bake 15-16 mins at 425. Next time use 1/2 the gathering motions. Quickly so the butter stays cold....James
2 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon salt 1/4 teaspoon baking soda 7 tablespoons unsalted butter, grated, frozen 3/4 cup cold buttermilk 2 tablespoons buttermilk for brushing tops

James, Can I use any whole-wheat flour, soy flour or almond flour in this recipe in addition to of course some white flour?

solargeek, WW flour will make the biscuit heavier.
