Clafouti is a French dessert which is really easy to make and not especially bad for you. And it is a good way to use cherries. I have some unpitted organic cherries in the freezer and they work great for this. The French use them unpitted, but you can also use pitted ones if you want/have them on hand.
Preheat your oven to 325F.
Meanwhile, whisk up 3 eggs, 1 c milk and 1/2c sugar in your mixer or by hand. Add in 1/2c flour and 1 tsp vanilla and 2T melted butter. Pour this into a buttered pie pan (I use ceramic/glass). Then plunk in as many whole cherries as you like/can. Put it the oven and bake for 45 minutes. It will puff up like a Dutch baby pancake. Let it cool a bit so you don't burn your tongue. It will deflate some and become kind of dense pudding-ish in texture. Good cold, too.
You can make it with plums (I'd stone them), too. I've read that you can use rice flour if you are a glutenfreak and can't use flour.
Easy peasy.

what do you think about fresh blackberries? They're so juicy, I wonder if they would make it too wet?

Blackberries should work. As long as you don't smash them. Place them neatly in nice concentric circles.
