A friend of mine described something she calls Hobo Supper. She said they eat it a lot in the summertime, into the fall. It's called Hobo Supper because back in the Depression, when men would ride the boxcars looking for any kind of work, they'd raid gardens at night. They'd find a handful of beans, some peppers, perhaps a cabbage, some carrots and sweet corn, you know. Whatever happens to be in the garden at the time. They'd top it usually with a piece of pork, cover it and cook it over a campfire, and dig in. I thought it sounded awesome, and a terrific way to use up bits and pieces of produce as they come in.
So I decided to make a variation-- Hobo Salad. This morning it had some home canned green beans, a chopped cucumber, chopped onion, some cherry tomatoes, some mixed beans (pinto, kidney, garbanzo, and plain ol' white beans) that I'd put up last summer, a chopped green pepper, a chopped carrot, some thyme and oregano from the herb garden, and a mixture of olive oil and balsamic vinegar shaken with a dab of Dijon mustard. I let it marinade a bit and at lunch time I chop up a hard boiled egg or two and throw that on, as well as some cubed or grated cheese, whatever's on hand. I think today I'll have it with rosemary crackers. Maybe tomorrow I'll make some corn bread muffins. It's cool, filling, and fast. And boy is it cheap eating!
Yep, Hobo Salad. When it cools down outside, I'll go with some Hobo Supper. I got some awesome pork chops not long ago from a guy with pastured heritage pigs. Mmmm!

We like to eat Hobo Omelettes sometimes (I learned about them about 5 years ago and I liked the idea too) and it's whatchagot dinner leftovers for the filling. I almost always add cheese and onion tho-.

We call that pot roast here, chop it up a little more, add a couple tomatoes and call it Hobo stew. I think I have added every vegetable grown in our gardens at one time or another, not all at once but a good variety everytime....James

I used to clean out all of the week's leftovers on Saturday morning and put it in the crock pot. I'd add a can of pork and beans and some meat if we didn't have any leftover. It was always great! I didn't know my leftover stew had a name. horseyrider I love the cold salad version. Great idea!
