I'm eating way less meat these days, primarily because of price. My local co-op sells tofu by the pound, so many varieties to choose from. I have used tofu in the past in scrambled eggs and chili. It seems to take on the flavor/taste of whatever it is cooked with. I am looking to expand my tofu repertoire with some beginner friendly recipes. Any suggestions?

A recipe that I like to use to introduce people to tofu is Tofu Parmesan.
Drain and press a block of tofu for about half an hour to an hour. Slice tofu then dip in flour, then egg wash, then seasoned bread crumbs or flour and lightly brown in hot oil. Place a layer of marinara sauce in a rectangular baking dish and then layer in tofu slices. Cover the slices with a layer of sauce and sprinkle with Parmesan cheese. Bake till all is hot and bubbling. You can add a layer of Mozzarella cheese at this point if you want to and bake till it is all melty.
This makes great hot sandwiches on Italian rolls, too.

Firm style sliced about 1/4 thick, pat water off, sauté in butter till golden and crispy outside - sometimes it might puff up. Toasted sesame oil, sriracha hot chili or taco sauce (La Victoria style) and a bit of soy sauce for dipping. Grated ginger, come on down! There was a maker that put shitake mushrooms in their tofu, that's how I got hooked on this one.
A friend cubed it up in a kind of rattatoui with lots of eggplant and Worcestershire sauce as her seasoning. Gave it a completely different take.
Silken style is nice just cubed and drizzled with maple syrup. And of course miso soup with slivered green onions, try some lemon peel slivers or a little grated over.

Might also look at tempeh. I personally like it much better than tofu.

hermitjohn, I actually like tempeh much more than tofu, also. I think it has more flavor, but I like certain things better with tofu like the tofu parmesan and tofu salad sandwiches.
I will post the recipe for tofu salad when I have time, I am a bit busy right now.
