My friend is coming for lunch on Thursday and I'm bouncing around several lunch ideas:
Maybe a quiche with eggs, cheese, breakfast sausage, mushrooms, cream and green onion?
Or chili with corn chips or hot biscuits?
Or egg salad sandwiches with lettuce, tomato and bacon? Potato chips on the side.
Or tuna salad sandwiches on rye topped with melted cheese and lettuce, tomato and bacon? Potato chips on the side.
Ginger ale or coffee.
Decisions, decisions. What do you think?

If you are growing your own eggs, definitely highlight them. You could do mini-quiche in muffin tins and have a variety of flavors... (I use those silicone cup liners for that.) Egg salad is more cooling if it is a warm day. (Put your location in your signature, you having warm days yet?)
Also consider the friend's tastes...

You can get tuna packed in water or oil. I've made the mistake of not looking and getting the one in oil before.

It has big, white chunks of tuna, with lots of good, clean flavor. I gave up on the name brands years ago because they look and smell like brown, mushy cat food.

Stef, I vote for either egg salad or tuna salad, although I prefer mine with whole wheat bread. I really like James' suggestion too, sounds yummy! OM, I love BLT's but only once I get those first homegrown tomatoes, too soon for that just yet! Fordy, I actually prefer my tuna in oil, hated when they switched over to water. I haven't been able to buy tuna in oil around here in over five years, water packed is all you can get. But I do wonder if they're using it again now just to hide the poor quality tuna, argh! I love Carnation brand tuna, but you can't find it very many places. A couple of years ago, I had a small local chain that sells it order me four cases when it went on sale. I'm on the last case now, watching for another sale. It still looks like what "chunk" tuna used to always look like, what you now have to pay top dollar for as "albacore" tuna! What most brands now label as "chunk" tuna I call tuna mush, lol! I got the Carnation on sale for 69 cents a can.

We've always had tuna available in both oil & water
In my kitchen, I'd vote for quiche ... but then I have 10 dozen eggs sitting on my counter.

We can our tuna, get it right off the boat at the dock. Big steaks put in a wide mouth pint jar with a little fresh spring water....James

MLF, I didn't think of that! I just got my chickens a few months ago, but I'm already getting real familiar with the phrase "Hmm, now what ELSE can I use eggs in???" ROFL!

Decisions, decisions. What do you think? I say any of these! they all sound delish! I love Tunafish and Egg Salad- what is your weather going to be like Thurs? I would base lunch off the weather- sunny and warm- go with the sandwiches- cool and/or rainy- go with the chili!

becka, I make a wonderful crustless quiche. I am in the process of moving and my recipe box is in storage. I got the recipe on Michigan Pony's site. It is easy and fail proof. I am sure your friend will be happy with whatever to serve!

MLF...That's actually my favorite, too. I just got back from shopping. Price matched eggs at WalMart for .99 cents a doz., and bought two. Their price was $2.29+/-. But, when I can get them, I love eggs from local.
Callie...if you have an Aldi nearby, just give them one try. It says right on the can 'albacore'. I don't think you'd be disappointed.
I might just give my friend a call and ask her to decide! LOL

I have tried Aldi's Stef, and it is good! I'd buy it if I couldn't get my Carnation, but as long as it's available I'll stick with it, it's even better, lol. Thanks for the tip though!

I separated the yolks and whites of eggs and froze them individually and separately in ice cube trays. After they froze solid I removed them and placed them in freezer bags. Well, over time the yolks got hard, 'gummy', almost. But when the whites thawed they were perfectly good to use as usual. I think I did something wrong in how I stored the yolks.
So much for my experiment. Give you any ideas?
p.s. I worked in a commercial bakery some years ago. We got big, five-gallon buckets of frozen whites and yolks, which we thawed overnight in the walk-in cooler. Obviously it can be done.

Glad you figured it out! I don't know how accurate it is, but I've read that to successfully freeze the yolks by themselves you need to stir them up with a sprinkle of salt. I've successfully frozen whole eggs beaten together in ice trays, and they come out pretty well, never tried them separate.

We had chickens when I was growing up and we had eggs in everything. I thought everyone put hard boiled eggs in their tuna salad.

I've read that to successfully freeze the yolks by themselves you need to stir them up with a sprinkle of salt. ...or sugar. It lowers the freezing point of the egg. Just label them so you know which is which, wouldn't want to over-salt your custard or sugar up your quiche...

Most of the time we smoke whole tuna steaks in the smoke house, eat some then while warm, the rest is cooled. A big slice in a whole wheat dinner roll with a little MW and several leaves of lettuce or tuna tacos are GOOOODD. No, we want tuna cooked well done....James

So here's what we had for lunch today. I think she liked it. The ingredients: shell, beaten eggs, home made pork sausage, bacon, sliced and diced tomato, bacon and lots of cheese!
The finished result: A slice of quiche and a fresh fruit cup ( sliced strawberries, bananas and green grapes topped with whipped cream).
