If I ever figure out how to sprout mung beans I plan on making some egg foo young. My grandmother on my dad's side used to make it and it was good. I'd like to take a shot at doing that.
I've tried sprouting mung beans twice in the past, so, I've failed both times. I just started a jar with 1/2 cup of mung beans and they are soaking. They are in a quart canning jar, with cheese cloth over the top and a jar ring.
If anyone has experience with mung bean sprouts, I could sure use a little help.

Try using less beans in the jar....I do mine just like you....give them time to sprout

I've done them, they don't come out so nice and fat and straight as the bought ones they come out a bit curly but edible. the most important thing I remember is they need rinsing every day, which is probably why they came out curly, but if you don't they go all slimey.

The easiest way to sprout them is to fill a bucket with clean sand, water that well, pour your seeďs,cover with about a half inch of sand. Keep the sand damp. Check about after a couple of days.
When they look like you want them, rinse well. Perfectly straight sptouts, ready to use.

I like to place them in a colander I have, layering them on a dish towel and cover them with another towel. Then water is poured over the whole thing. Then they sit, with the colander inside a big bowl, in the dark (covered with a plasic bag), and water poured over them daily and drained away. It's supposed to be twice a day but I forget half the time. The way to to keep them fatter is to put a weight like a heavy dish on the top of the towel to weigh the sprouts down.
It helps to rinse the beans thoroughly (until the water runs clear) and blanch in hot water before starting but then I don't do that most of the time either.

The first hurdle is having the beans germinate. There are very few germinating so I ordered some and they will be here next week. I'll starve to death not having egg foo young by the time I get this right. I'll try pressure canning the beans that will not germinate, and eat them in salads or stews.

Amazingly at 4 days, I had to soak the beans about 24 hours instead of 12, and now, I'm at about 50% germination, of the old beans, this is good, really good. I may have sprouts this next week! I'm rinsing them 3 times a day. I'm hoping for egg foo young this next week.
I don't have sand on hand, but I have towels. I might put them to bed in some towels tonight and weigh them down. I'll let you know how it goes.

feather , not terry cloth towels otherwise the roots will grow into the fabric. Paper towels would work. I use flour sack material towels.

This thread has given me an idea about all those lentils I bought to make myself eat. That I won't eat. You'd think by my age I'd be over the 'you should' lectures by online experts.
I'm going to try sprouting them. I wonder what they will taste like.

Ended up separating them from the sprout mix and putting them in a slow cooker stew 'cause I like cooked lentils.

My mung beans have been sleeping in a tea towel in a colander in a bowl, they are an inch long. It's been a week, another few days and they'll be big enough to cook with.

Okay, it took 10 days. They germinated. They needed at least 24 hours of soaking, maybe because they were older. They started out in a quart jar, cheesecloth covering the top, for 1/2 cup of mung beans. They stayed that way for a couple days. Then they were moved into a colander in a bowl, resting in a tea towel, the tea towel under them and over them. Rinsed 3 times per day. They started to lose their hulls near the end. (DH thought that they were slugs, "SLUGS" "WHERE?", he had me grossed out, but they were just the hull of the seed. That part is green, half a hull, kind of looks like a little slug.) 1/2 cup mung bean seeds turned into about 6 cups of sprouts, very crunchy, just starting to send out the first leaf. They go in the refrigerator now until I make the egg foo young. I'm happy. Thank you all for helping. I'd do this again!
